Legend has it that in 1919 Count Camillo Negroni asked at Bar Casoni in Florence to have his Americano strengthened with gin instead of soda. Bartender Fosco Scarselli obliged and swapped the lemon for orange. Ever since, the Negroni has been the simplest formula in the bar world: three equal parts that add up to more than the sum.

The Negroni is the drink you test a bar with. Too much ice, too little stirring, a cheap vermouth, and it falls apart. Done right it is bitter, sweet, strong and cold at once, and it demands a second.
