Daiquiri

Three ingredients, no ice in the glass, ice cold: the Daiquiri is the most elegant rum drink and the opposite of the ready-made mix that carries its name.

Ingredients

  • 6 cl white rum
  • 2.5 cl fresh lime juice
  • 1.5 cl sugar syrup

Glass: Coupe, chilled
Garnish: Lime wheel or nothing

Method

  1. Shake all ingredients hard with plenty of ice until the shaker frosts.
  2. Double-strain into the ice-cold coupe.
  3. Drink immediately, it warms up quickly.

The Daiquiri was invented in 1898 near the Cuban mine of the same name, supposedly by an American engineer who ran out of gin. In Havana the bar El Floridita made it famous; Hemingway is said to have drunk twelve in a row there, without sugar and with double rum.

A Daiquiri is a sour with nowhere to hide. The rum has to be good, the lime fresh, the ice hard, the coupe cold. In the cocktail bars of Barcelona and Berlin it is the drink bartenders order themselves.
